Eating....

So the first 2 days have been good. I haven't totally 86'd all processed food but at least 1-2 meals a day have been healthy and whole.

Saturday- Brandon whipped together a little bean and corn salad. It was really simple, and pretty tasty!



1 can Black Beans drained
1/2 large sweet red italian onion chopped
4 ears of roasted corn kernels cut off the cob
1/4 c of a combo of nuts (we used walnuts and pecans)
1 clove Garlic
Salt
Pepper
Olive oil
Splash of Red wine vinegar
2 heirloom tomatoes (chopped)

Sauté the onion and garlic in olive oil first, until onions are translucent.
Then add black beans (drained) and corn kernels.
Once mixture is warm take off the heat and add tomatoes and nuts.
Put in a large bowl- add a splash of red wine vinegar, salt & pepper to taste, drizzle of olive oil.
Toss and serve.
Also, really good the next day after everything has had a chance to sit and flavors have combined.
