Cake-tastrophie

My cake so did not work! So I had a little fun with it. It still tastes really good tough. But we went out and actually bought a cake. This is the FIRST time I have ever bought a cake for a birthday but we were laughing the entire way to the store. The kids will love the cake when they get home and see it. But I just wasn't ready to bring my "mountain of poo" cake to the party. We'll enjoy it with family instead.

Here's the recipe. (Just don't use Cake flour- I think that was my problem. I never tried this recipe before with the cake flour and think thats why it fell apart.)

My mom called it Chocolate Sheet cake, but I found the same recipe else where called Texas brownies. Its a really moist super yummy brownie/cake, but not as dense as a brownie.

Bring to a boil:
1 C water
1 stick butter
6 T cocoa
1/2 C shortening

Pour this mixture over:
2 C Sugar
2 C Flour

Add:
1/2 C Buttermilk ( or 1/2 C milk w/ 1 T vinegar)
1 tsp vanilla
1 tsp baking soda
2 eggs (make sure mixture has cooled enough before adding eggs or you'll have scrambled eggs)

Bake at 400 degrees for 20-25 mins in greased sheet pan.

Icing:

Boil:
4 T cocoa
6 T milk
1 stick butter

Add: (off the heat)
1 box powdered sugar
6 T milk
Optional- 1 c chopped nuts

Pour this over cooled cake. Tends to work best if you keep cake in sheet pan. Icing rolls off sides.

Enjoy and let me know if it worked for you. Its so easy!

YUM! Thanks for the recipe. I can't wait to try it. I just have girls, so if it turns out like yours, I'll have to put Sleeping Beauty, the Witch, the Dragon and the Prince on it. Maybe with some pink sprinkles?

I never commented before...I've been reading your blog since before your pregnancy. Anyway, I read that you use a Nikon D40, so I bought one myself. I LOVE it! Love it. Never would have even thought about it if it wasn't for you. So Nikon owes you a commish. :-) Bonny in New Mexico
